Blue Duck Deli opens after a year-long delay

LUDLOW, Vermont – The Blue Duck Deli, located at 117 Main Street in Ludlow, recently opened and is bringing a new flavor to town. After a year-long delay in opening due to the catastrophic flooding in July 2023, Bex Prasse and Craig Kovalsky are excited to bring their unique experience to Ludlow’s culinary scene.

The couple strives to offer their customers real, fresh food prepared in-house to give customers a unique experience with each meal. Blue Duck Deli opens at 8 a.m. Thursday through Monday, initially offering fresh pastries, hand-crafted espresso drinks, as well as quick-drain coffee to go. The company aims to offer guests meals with no additives, directly from the farms it partners with. The deli strives to work with as many local farms as possible to guarantee freshness and maintain a sense of community in the cities.

Every animal and product used to create these wonderful meals has been seen by Prasse and Kovalsky, so they are aware of the quality they offer to each customer. In this way, Blue Duck Deli aims to bring back real taste and fresh, delicious food in a sustainable way.

The deli is also open for lunch from 11:30 a.m. to 3:00 p.m., offering a tasty and creative selection of sandwiches, soups and salads. All meats served for lunch are roasted in-house, giving each guest an exceptional experience that will leave them wanting more.

Besides providing fresh, tasty food, that’s not all that gives Blue Duck Deli a unique touch. Chef Kovalsky has 18 years of culinary experience, is trained in French and has experience as a chef on a private superyacht. Prasse also has experience as a charter captain on sailing vessels and thanks to the extensive experience of both, the menu has unique dishes that show influences from French cuisine as well as their extensive travels.

Blue Duck Deli will stick to breakfast and lunch hours for the near future, but is excited to launch a dinner program in the winter that will provide more options for a fresh, flavorful dining experience. Come by and enjoy the unique cuisine and atmosphere that Bex and Craig have spent a year trying to introduce to the city.
